What is the Difference Between Red & Green Chili Sauce? Which Chilies are Hotter & Spicier?

There are several dishes you can order at a Mexican restaurant that will leave your server asking whether you would prefer to have red chili sauce or green. If you aren’t sure what makes these two kinds of sauces different, you may not know exactly how to answer that question. There is a difference between different chili sauces and knowing what you want will be helpful anytime you are enjoying Mexican food. Eddie’s Mexican Restaurant is here to talk about the difference between red and green chili sauce, so you know what you want next time you’re asked.

Are Green Chilis the Same as Red Chilis?

Interesting enough, the difference between a red and a green chili is the amount of time they are left on the vine. Most peppers will eventually turn red if they are left on the plant for longer periods of time. If they are picked early, they are green peppers. It doesn’t have much to do with the flavor of the pepper. This will come if choosing different varieties of peppers. The difference in red and green chilis also has to do with how they are prepared.
– Red: Red chilis are often roasted and then peeled to use in many different types of sauces. They can also be strung up into a ristra and hung to dry. If this is done, they will be rehydrated when they are going to be used in a recipe.
– Green: Just like red chilis, green chilis are often roasted as well. They are used to make green chili sauce. They can also be dehydrated and ground to make green chili powder. These chilis are also chopped up to be used in many salsas as well.

Which Chilies are Hotter? Red or Green

The heat that is found in certain sauces depends on a couple of different factors. First, the type of chili that is used often has an impact on how hot the sauce is going to be. Another thing that can help to make a sauce spicy will be whether or not the seeds and veins are left in the pepper when preparing the sauce. The heat that comes with a pepper often relies on the seed, the dirt, the water, the altitude and climate that the pepper is grown in. As a rule of thumb, red peppers that are left on the vine to ripen for longer will end up tasting sweeter. If you are eating green peppers, they are going to have more of an herby flavor to them.
