The filled and rolled tortilla is then covered with some sort of peppers sauce then it is served on a dish. The great thing is that you can create the type of enchilada that you want.
Another dish that you might want to give a try to is called a chalupa. This is a dish that is commonly found and is very similar to a taco. The shell of the chalupa is what sets it apart from other tacos. The tortilla is made from masa then it is deep fried. The shell is then filled with whatever topping that you choose that is the same as any taco.

You cant really talk about Mexican food and not add in tamale. Most people know what a tamale is but it eludes most when trying to make an authentic one in your own home. The tamale is a cornmeal dough that is filled with a spiced meat that is then added to a steamer and cooked. The way that they are kept moist is by the corn husk that they are wrapped in when they are being steamed.
