Mexican Sauces; Mole Rojo Enchilada, Zesty Relleno, Chile de Arbol Salsa, Queso Cheese Dip, Baja Cream Sauce & More

Mexican food is a popular choice among many people. When it comes to a number of dishes, it is often used with sauces. Today, we at Eddie’s Mexican Restaurant would like to share a few of the most common sauces used in Mexican cuisine.

Mole de Queretaro Sauce

Made with pasilla and ancho chili peppers as key ingredients is how this mole from Queretaro is traditionally created. Generally, a few versions, apart from chili peppers, includes peanuts, onions, bolillo bread, walnuts, toasted tortillas, chicken stock, almonds, lard, chocolate, raisins, and dry-roasted tomatoes. Black pepper, cumin, cloves, allspice, and marjoram are among the array of spices that enriches the sauce. It is usually spooned over chicken or turkey since Queretan mole is quite thick. With chopped coriander and nuts it is recommended to garnish this tasty mole when served.

White Mole Blanco Sauce

Such as for Easter or Christmas, mole blanco is a rare type of mole that is prepared for special events. The sauce consists of almonds, peanuts, pine nuts, Spanish almonds, garlic, onion, habanero peppers, and chicken broth as it is an extremely creamy, thick and nutty. Mole blanco is traditionally presented with pípí or chitapí, which is an edible flower growing on trees in Mixtec, Oaxaca. Though modern cooks are more likely to use a blender, mole blanco was prepared in a stone molcajete with a tejolote Mexican mortar and pestle in the past.

Mojo de Ajo Garlic Sauce

Being popular in Mexico, Chile, Cuba, and many Caribbean and Latin American countries Mojo de ajo is a garlic sauce is derived of crushed garlic, olive oil, salt, and lemon, orange, or lime juice. The sauce is ready to be consumed by ingredients are simply blended together until smooth. It seasons yucca, tostones, steaks, chicken, vegetables, and just about anything else. Mojo de ajo is typically used with a fish known as pejelagarto in Mexico.

Pipian Rojo Sauce

With a unique, nutty flavor Pipian is a spicy Mexican mole sauce. Being either dried or roasted, pipian consists of cumin, coriander, garlic, dried chiles, and ground squash or pumpkin seeds. In order for pipian to develop a more liquid consistency, lemon juice can be additionally added to the combination. While it is also commonly used as a flavorful rub for meat, the sauce is traditionally served over enchiladas or roasted chicken.

Mole Poblano Sauce

Though it translates to a mixture or a concoction and moles are extremely dark and rich sauces originating from the Aztecs who called it molli. In a traditional Mexican stone mortar and pestle known as molcajete, the base for the sauce are fresh or dried chile peppers ground. Being a variety of other ingredients such as selected herbs and spices, fruits, vegetables, seeds, nuts and cornmeal. Adding earthy flavors to the spicy seasonings, most moles usually contain one more ingredient, like dark chocolate. At least twenty ingredients, including the likes of cinnamon, black pepper, poblano chiles, cloves, anise seed, and chocolate.

Mole Rojo Enchilada Sauce

Red enchilada sauce is also known as salsa roja, mole rojo or salsa roja para enchiladas. It is a sauce made out of ancho, pasilla, New Mexico and/or Cascabel chiles, tomatoes, onion, garlic, broth and seasonings, blended together and simmered until thickened. Enchilada sauce is used primarily to smother enchiladas but can also be used in soups, burritos, skillets and more.

Chile de Arbol Salsa

This Chile de Arbol salsa is very spicy, as the arbol chile pepper brings a lot of heat with it. The mixture of tomatoes and tomatillos creates a bright salsa with a slightly tangy taste and the cilantro helps to give it a fresh flavor.

Baja Sauce

Baja sauce is a spicy seasoned mayonnaise typically made from sour cream, mayonnaise, jalapeno pepper, garlic, lime juice, cilantro and Mexican seasonings.
