How Does Eddie’s Keep Guacamole Green? Tips to Keep Avocado from Turning Brown After Being Cut & More

In the past decade avocados have taken the food world by storm. More and more people are finding this delicious food in the forefront of their diet as it offers many nutritional benefits as well as flavor. The biggest problem that many people have with avocados is the ability to keep them fresh. Eddie’s Mexican Restaurant is here to share some tips that will help you keep your avocados from going bad so quickly.

Why Avocados Turn Brown After Slicing

Is there anything more frustrating than an avocado going brown in what feels like moments after cutting it open. It can be rather unpleasant to think about eating a brown avocado. The reason it turns brown is actually quite amazing. The process of browning comes from the contact of oxygen and the fruit. This oxidizing effect is known as polyphenol oxidase. This is believed to be a defensive mechanism as it wards off animals and pests that will find it delicious if it were to stay green. Also, this brown layer keeps bacteria from penetrating the fruit and has an antibacterial effect on the fruit.

How to Keep Sliced Avocado Green

While this oxidization process is totally normal and can be easily cut off the top layer of fruit, if it can be avoided that is ideal. Following are some tips that will keep your avocados green.
Plastic Wrap: If you haven’t used the entire avocado in one sitting, you can cover it tightly with plastic wrap to keep it from browning. Make sure the wrap is making contact with the avocado.
Lemon Juice: Lemon juice will act as a shield from the oxygen when it is squirted on top of the fruit. While this is a good short term plan, you need to realize that the lemon juice barrier will only hold up so long before it fails and the fruit ends up turning brown. It does a great job of keeping you avocado green while you are serving it though.
Onion: Believe it or not, when you place a couple of slices of onion in a container with avocado, its gases will keep oxygen from turning the fruit brown. Make sure the onion doesn’t come in contact with the green portion of the fruit so that the flavor isn’t altered at all.

How to Keep Guacamole from Turning Brown

Most guacamole has onions in the recipe. Rather than mixing those onions into the guac, simply sprinkle them on the top and put the mixture in a sealed container until you are ready to serve it. When ready, simply mix the onion into the guacamole and you will have perfectly green guac.
