Where Were Fajitas Invented? From Ranch Life to Modern Restaurant Entrees

Fajitas are now a staple on menus across the globe, which are known for their sizzling presentation and customizable fillings. But while many of us associate them with modern Mexican or Tex-Mex cuisine, the true origin of fajitas is a tale deeply rooted in Texas ranch culture, working-class ingenuity, and culinary evolution. So where did this beloved dish come from and how did it become the table-side spectacle we know today? Eddie’s Mexican Restaurant would like to highlight the origins of fajitas.

Fajita Ranch Life in South and West Texas

The word fajita is derived from the Spanish word faja, meaning “belt” or “girdle,” referencing the cut of meat traditionally used in the dish such as a skirt steak. During the 1930s and 1940s, Mexican cowboys known as vaqueros worked on cattle ranches in South and West Texas. As part of their pay, they were sometimes offered the less desirable cuts of beef, including the tough, flavorful skirt steak. Instead of discarding these cuts, vaqueros marinated it in spices, grilled it over an open flame, and sliced it thin across the grain. The result is a tender, smoky, and rich piece of meat that we now recognize as the original fajita. They typically served it with flour tortillas, beans, and whatever simple sides were available.

From Ranch to Restaurant

For decades, fajitas remained a ranch-hand specialty, mostly unknown outside of Texas cattle country. That changed in the 1960s and 70s when Mexican-American and Tejano chefs began introducing fajitas to a wider audience. One key figure in the dish’s rise to fame is Sonny Falcon, a meat market manager and part-time food vendor in Austin, Texas. In 1969, Falcon is credited with opening the first commercial fajita stand at a local festival. His sizzling fajitas were a hit, and the concept began to spread. By the 1980s, fajitas were appearing on restaurant menus in Texas and beyond, often served on hot cast iron skillets, paired with onions, bell peppers, and flour or corn tortillas. This theatrical presentation, along with the DIY nature of assembling your own meal, helped fajitas become one of the most popular Tex-Mex dishes of all time.

Modern-Day Fajitas

Today, fajitas have evolved well beyond their skirt steak origins. Restaurants now offer chicken, shrimp, pork, tofu, and even veggie fajitas.
