What is the History Behind Enchiladas? Is Green or Red Sauce Better? What is the Secret to a Great Enchilada?

Enchiladas are an all-time favorite food for many people. Enchiladas can come in a variety of different types or fillings and are topped with a flavorful sauce. As enchiladas are a popular and favorite Mexican dish, have you ever wondered where enchiladas come from? Enchiladas have a rich history that often surprises many people. For those who have never considered the history and evolution of the enchilada, Eddie’s Mexican Restaurant would like to share the history and some fun facts about the enchilada.

Are Enchiladas Mayan?

The origins of the enchilada is very old and dates back to the Mayan civilization. However, the Mayans made enchiladas a bit different than we do today. Today we make an enchilada with a flour or sometimes a corn tortilla, we fill it with meat and or cheese and top it with a flavorful enchilada sauce. However, the Mayan people would use corn, as corn was the primary crop used by the Mayan people. The Mayan called their tortilla a tlaxcalli, and when the Spanish conquistadors arrived, they change tlaxcalli to tortilla. Nevertheless, it was the conquistadors that first documented the enchilada. During a feast prepared by the Mayans, the conquistadors were served a number of different dishes. including the enchilada. Later this feast and the enchilada dish was recorded by a very early Mexican cook in the El Coninero Mexicano. Originally the Mayans made the enchilada using an empty corn tortilla that was dipped in a chili sauce. It was later that people began stuffing the sauce covered tortilla with meat, vegetables, and cheese. Once people began filling the tortilla, it quickly became a favorite and a Mexican staple.

What is the Secret to Good Enchiladas?

Today there are many different ways you can eat an enchilada. The core of every enchilada still comes from its ancient roots, a tortilla that has been dipped in a chili sauce. With the chili covered tortilla, people will often opt to fill the tortilla with cheese, meat, and some vegetables. However, there are a number of different ways that an enchilada can be prepared and is often made by the person’s own preferences. Where you can make enchiladas using various meats, cheeses, and vegetables, the primary ingredient is the chili or enchilada sauce. So what is in the enchilada sauce and what makes it so flavorful? Enchilada sauce is made from chilis or a chili powder.

Is Green or Red Enchilada Sauce Better?

Traditionally, enchilada is dipped in a red sauce. However there is a green enchilada sauce that uses tomatillos instead of red chilies. Along with red chili, enchilada sauce is a combination of garlic, cumin, and oregano. Using the right blend of spices, enchiladas have a great and bold flavor that puts it at the top of many people’s favorite Mexican dishes. When preparing enchiladas the method varies from dipping the tortilla in the sauce while other people will pour the enchilada sauce over the stuffed tortilla. In some cases, people will do both dip and pour the enchilada sauce over the stuffed tortilla. You must enjoy your enchilada the way you like it.
