The origins of the enchilada is very old and dates back to the Mayan civilization. However, the Mayans made enchiladas a bit different than we do today. Today we make an enchilada with a flour or sometimes a corn tortilla, we fill it with meat and or cheese and top it with a flavorful enchilada sauce. However, the Mayan people would use corn, as corn was the primary crop used by the Mayan people. The Mayan called their tortilla a tlaxcalli, and when the Spanish conquistadors arrived, they change tlaxcalli to tortilla. Nevertheless, it was the conquistadors that first documented the enchilada. During a feast prepared by the Mayans, the conquistadors were served a number of different dishes. including the enchilada. Later this feast and the enchilada dish was recorded by a very early Mexican cook in the El Coninero Mexicano. Originally the Mayans made the enchilada using an empty corn tortilla that was dipped in a chili sauce. It was later that people began stuffing the sauce covered tortilla with meat, vegetables, and cheese. Once people began filling the tortilla, it quickly became a favorite and a Mexican staple.
