I’m originally from Arizona but live in Tennessee now. Hard to find great Mexican food. Every time I visit Vegas, I would go to Macayos. I had to do some research since all Macayos are closed in Vegas. I found out Eddies is basically Macayos with not only the same menu but also a better menu. Fantastic food! About a 20 dollar Uber ride from the strip. Well worth it. Side note. It is staffed with former Macayos staff. Some who have been there 30 years and more! I had what we used to call a cheese crisp but now just called the quesadilla. It’s an open very thin tortilla with cheese. Perfection! Also had the crispy shredded beef tacos and fried burrito with enchilada sauce!
